I use starches as powders, primarily. Let's Do Organic starch is heavenly. It's finer than corn starch, and, therefore, provides a silky smooth feel. I always keep at least one box ahead so I don't run out.

For years I've made lemon meringue pies from scratch, using store-bought corn starch. I thought that the tapioca starch would be healthier. It may be, but for the first time I had gummy lemon filling. It was very disappointing, especially since I had company over for dinner. There may be a trick to using tapioca starch, but I don't know what it is. Think I'll go back to corn starch, but buy organic this time.
