About the Author

Caroline Chambers grew up in the kitchen on her mom’s hip, learning how to cook in their Winston-Salem, North Carolina, home. Her professional food career began in her early twenties when she worked as a chef and caterer. After a stint in a professional test kitchen, Caro struck out on her own as a freelancer, developing recipes for a host of publications as well as brands such as Boursin Cheese and Kim Crawford Wine, and in 2018, she published her first cookbook, Just Married. In 2020—at the height of the pandemic—Caro began sharing her recipes and connecting with home cooks on Instagram (@carochambers), and launched her newsletter, What to Cook When You Don’t Feel Like Cooking, which flew to the top of the Substack charts; her podcast, So Into That, followed in 2023. Caro lives in Carmel Valley, California, with her husband, George, and their three young sons, Mattis, Calum, and Cashel—one of whom can almost always be found in the kitchen on her hip. When she doesn’t feel like cooking, Caro’s go-to meal is Veggie Peanut Noods (page 52).

If there is one cookbook you buy this year this should be it! Caro is an actual genius and makes cooking so approachable. She gives you so many great tips to actually teach you how to cook and feel confident in the kitchen rather than just having to feel like you must follow a recipe verbatim for the rest of your life. And if that doesn’t make you want to buy it just wait…. She has organized the book into length of recipe. So when you’re in a time crunch and have 15mins you can easily find those quick recipes. Or if you are feeling fancy and want to spend a few hours getting down in the kitchen there’s a section for that too. And if you think, well sorting by time is great but it’s not for me, fear not!! She also has an index sorting the recipes by protein type - genius! If you thought she only sorted the recipes two ways, surprise there’s a third! She also sorted by mood which is the cherry on top. It’s clear how much love Caro poured into this book to help us all cook when we don’t feel like cooking!

Let's face it, we are all exhausted when we get home from work. The last thing I want to do is spend another hour cooking dinner. But Caroline Chanbers makes this necessary part of life easy with this cookbook! With these recipes, I can cook an easy, flavorful, and healthy recipe for my family of four in 15 minutes. I love how the book organizes recipes by protein, time, and occasion. This makes it very easy to find something to whip up. She also gives you permission to stray from the recipes by swapping ingredients or skipping ingredients altogether. I've done exactly that plenty of times and these recipes still turn out delicious! My two toddlers who are usually very picky eaters even approve of Caro's recipes. They like helping me choose something for dinner by looking at the bright, beautiful photographs in the book. Highly recommend this cookbook for yourself and as a gift for all your friends. It's my family's new go-to in the kitchen!

My best friend has been singing the author’s praises to me for over a year and telling me to subscribe to her substack recipe membership. Foolishly I didn’t listen, but followed along on instagram and when the cookbook came out I immediately ordered it. Holy moly, out of the 50 cookbooks I own THIS is the one! As a busy working mom with two kids, I am often feeling wondering what to cook when I definitely don’t feel like cooking. These recipes are organized by time, full of flavorful hacks, and allow me to feed my family delicious dishes that get licked clean! I’ve made 3 recipes already this week — these pesto meatballs with summer tomato salad were amazing. Do yourself a favor and get this cookbook!

I love how this cookbook is laid out! There is no turning pages in the middle of a recipe. The author thoughtfully planned it out so every recipe only requires a turn to 1 page! There are also pictures for each recipe. But my favorite thing has to be all the swaps, riffs, and advice in the margins of the pages. Don't have every little ingredient? No problem! There are ideas for swaps at the beginning of the book, as well as notations on the sides of the recipes.
